Cultivating your own starter is like having a tiny, living ecosystem in your kitchen. It requires regular feeding and care, fostering a deeper connection to the natural world and the processes that sustain life. It’s a reminder that good things take time and attention. If you notice your sourdough culture needs a little help doubling in size, consider these two things: 1. Warmth- Cold temperatures will slow the process down, whereas warmer temperatures will speed it up. Try to find a warm spot in your kitchen to keep your starter. (A microwave or oven with the light on. Be sure not to cook it!) 2. Feedings- Think of your starter like the snickers commercials, you’re not you when hungry & either is your starter. The cultures may need a hefty feeding of flour, try a 1:1:2 ratio (starter:water:flour).
